Wow, someone just wasted an absolute fortune. I wouldn't have paid 10% of that price for that domain.
I realise that. I just think they were ill informed to pay that for a hyphenated domain, which would seem to be true since that is the record breaking sale and its not a particularly good term (hotel reservation) in comparison to others.
Or maybe the buyer knows more about the hotel reservation industry than you do and and is confident they'll get a good ROI that fits their business model?

It's perhaps the same people who own the unhyphenated version.
If you look at another example: holiday-rentals.co.uk (& that is the domain they host their site on), they also own holidayrentals.co.uk & holiday-rentals.com
I guess it works for them?
